Pudina Rice - Andhra Recipes
Ingrediants
1 bunch of Pudina
cashews (2 table spoons)
Garam Masala
1 large onion - chopped finely
3-4 green chilles
1/2 Tea spoon ginger garlic paste
3 cups Rice
Salt to taste
Oil for seasonning
Process
Start with seperating the pudina leaves from the stems. Clean the leaves throughly and dry them. Take a large frying pan, and heat one tea spoon of oil in it. Add the cleaned leaves to the pan and fry them until they wilt completely. Romove them and let them cool. Then grind them into a fine paste with the chilles adding a little water. Keep this paste aside.
Now in the same pan as above, heat one tea spoon of oil, add the finely chopped onions and fry until slightly brown. Then add the ginger garlic paste and fry a little. Then add salt, garam masala, and the pudina chillie paste to it. Allow all this to cook for two minutes. Then transfer this into a rice cooker that contains, the washed rice.
Cook and serve it hot with fresh curd. This is an excellent reciepe for quick lunch/dinner.
