Three Taste Fish
Ingredients:
* 1 Garoupa, 600 gm
* 1/2 onion, chopped
* 20 gm ginger, chopped
* 2 chilli padi, chopped
* 1 tbsp chopped garlic
* Adequate coriander, shredded
* 1/2 tsp salt
* 3 tbsp cornflour
Seasoning:
* 3 tsp light soya sauce
* 1 tsp oyster sauce
* 1/2 tsp sugar
* 1 tsp Shaoxing wine
* 1/4 cup water
Making Three Taste Fish
1. Scale, remove gills and intestines, then dimidiate. Clean and drain. Add in salt and cornflour to marinate fish for 15 minutes.
2. Deep fry fish until cooked. Drain for later use.
3. Heat up wok with 2 tbsp of oil, stir fry chopped onion, garlic, chili padi and garlic till fragrant. Stir in seasoning, bring to the boil, pour over the fish.
4. Sprinkle coriander on top.
