Mangosteen Salad

Ingredients:

Dressing:

* 1kg calamansi limes, extract juice
* 300g caster sugar

* 100g freshly grated coconut
* 150g chicken breast, marinated with salt and pepper, grilled
* and sliced
* 100g dried cuttlefish strips, wok-roasted
* 1kg mangosteen, peeled
* 200g medium-sized prawns, cooked and peeled

Topping:

* 50g peanuts, wok-roasted and pounded
* 50g sesame seeds, wok-roasted


Making Mangosteen Salad
1. To make dressing, combine the lime juice and sugar, stirring until sugar dissolves. Keep chilled until required.
2. Prepare salad by layering from the bottom up in this order: grated coconut, chicken slices, dried squid, mangosteen, more coconut and prawns.
3. Top with peanuts and sesame seeds before pouring the dressing over.
4. Serve with some Vietnamese prawn or/and fish crackers.
