Vietnamese Fish Dipping Sauce
Ingredients:
* 2 parts sugar
* 1 part water
* 1 part fish sauce
* 1 part vinegar
* 1 clove garlic, chopped finely
* 2-3 bird’s eye chillies, chopped finely
Making Vietnamese Fish Dipping Sauce
1. Boil together the sugar and water to dissolve the sugar.
2. Remove from flame and add the fish sauce and vinegar; adjust to taste.
3. This mixture can be kept in the fridge for one to two months.
4. When serving, add finely chopped garlic and chilli.
Variations: In the north, fish sauce is used. In the South and Central Vietnam, shrimp paste replaces the fish sauce.
