Eggplant with Ginger

Ingredients:

* 2 eggplants, thinly sliced
* 1 large onion, thinly sliced
* 1 red pepper, thinly sliced
* 1 yellow pepper, thinly sliced
* 2 shallots, minced
* 2 cloves, minced
* 5cm ginger, thinly sliced
* 3 fishcakes, thinly sliced
* 1 tbsp dark soy sauce
* 30ml water
* 30ml oil


Making Eggplant with Ginger
1. Saute minced ingredients until fragrant. Add ginger, then put in soy sauce and water.
2. Stir in fish cakes and other ingredients. Stir well.
3. Serve hot.
