Burmese Mutton Curry

Ingredients:


* 5 cloves garlic
* 6 stalks lemongrass
* 5cm piece old ginger
* 15 dried chillies
* 5cm piece fresh turmeric
* 2 tsp white peppercorns
* 5cm piece galangal
* 1kg boneless mutton
* 8cm piece cinnamon
* 5 star anise
* 2 tbsp garam masala
* 2 tbsp soy sauce
* 1 tbsp dark soy sauce
* 5 kaffir lime leaves
* 2 turmeric leaves, chopped


Making Burmese Mutton Curry
1. Heat oil in wok until very hot. Add pounded ingredients, cinnamon and star anise. Stir fry until the oil turns red and fragrance is released.
2. Add the mutton and garam masala and stir fry for 5 minutes.
3. Pour in enough water to cover the meat. Bring to a boil, then add the remaining ingredients and cook for 1 ½ hours till gravy turns oily and fragrant.
