Nasi Goreng Keropok Belinjau

Ingredients:

* 400g cooked one-day old rice
* 40g margarine, melted
* 100g mixed vegetables
* 100g prawns, peeled
* 50g chicken meat, thinly sliced
* 2 shallots, minced
* 2 cloves garlic, minced
* 1 tsp pepper
* 1 tsp paprika powder
* 1 cube of chicken stock
* 2 stalks spring onion, cut diagonally
* 1 stalk coriander leaves, chopped
* 50g keropok belinjau, fried and kept in air-tight container


Making Nasi Goreng Keropok Belinjau
1. Heat margarine and stir fry minced ingredients until aromatic. Add prawn, chicken meat, pepper, paprika powder and chicken stock.
2. Add rice and mix well.
3. Add mixed vegetables, spring onions and coriander leaves. Stir to combine.
4. Serve with keropok belinjau.
