Nasi Goreng
Ingredients:
* 4 cups cooked rice
* 2 eggs
* 1 onion, chopped
* 1 clove garlic, crushed
* ½ tsp cardamom
* 1/2 tsp turmeric
* 1/4 tsp chili powder
* 1 tbsp shrimp paste (belacan)
* 1 chicken breast, diced
* 250g green prawns, shelled and peeled
* ¼ cup vegetable oil
* 2 tsp salt
* 1 green and 1 red chili, sliced finely
* 2 lengths celery, sliced finely
* 1 cup coconut milk
* 1 tbsp soy sauce
* Shallots, chopped
* Fried onion flakes
* Prawn crackers (keropok)
Making Nasi Goreng
1. Fork through cooked rice to separate grains.
2. Make two thin omelets with the eggs. Shred finely.
3. Blend the onion and spices together. Mix in belacan.
4. Heat wok, add 2 tbsp oil and fry the spice paste for a minute and then add chicken and prawns. Remove to hot platter.
5. Add remainder of oil and put in rice and salt and fry for five minutes. Add the vegetables and return the chicken and prawns. Mix well and correct seasoning.
6. Pour in coconut milk, cover with a lid and simmer for five minutes.
7. Take off lid, continue to cook ingredients, add soy sauce and chopped shallots. Cook for a further five minutes.
8. Serve garnished with fried onion flakes and omelet shreds. Aso serve with prawn crackers.
