Balinese Braised Beef

Ingredients:

* 1kg chuck, shirt or topside
* 2 cups beef stock
* 1 large onion, chopped
* 2 cloves garlic, crushed
* 1 tbsp shrimp paste (belacan)
* 4 red chilies
* 6 candlenuts
* 2 tbsp vegetable oil
* 2 pieces laos or green ginger
* 3 daun salam or bay leaves
* 1 tsp salt
* 1 tbsp sugar
* ½ cup thin coconut milk

Making Balinese Braised Beef
1. Chop steak into pieces about 5cm square. Simmer in stock for half and hour or until tender.
2. Blend onion, garlic, shrimp paste, chilies and candlenuts into a paste.
3. heat wok, add oil, and when hot, fry the paste mixture on low heat for 2 minutes. Add the laos , daun salam, salt, sugar and coconut milk. This is the Bali sauce.
4. Drain the beef of any remaining stock, and add the meat to the Bali sauce. Allow to simmer for 10 minutes until almost dry.
5. Serve with plain steamed rice and a cucumber salad.
