Fried Fish Balinese Style
Ingredients:
* 1 whole fish (bream, snapper or mackerel) not more than 1kg
* 1 tsp corn flour
* 1 tsp salt
* 2 cups vegetable oil
* 1 large onion, finely sliced
* 2-3 long red chilies (or 2 birds-eye), finely sliced
* 2.5cm piece green ginger, finely chopped
* 1 tbsp lemon rind, finely chopped
* ¼ cup asam (tamarind) juice
* 1 tbsp sweet soy sauce
* 1 tbsp brown sugar
* 2 tbsp water
* Shallots, finely chopped
Making Fried Fish Balinese Style
1. Clean fish and score both sides. Dry thoroughly with absorbent paper.
2. Sprinkle fish with corn flour and salt mixed together, inside and out side.
3. Heat oil and deep fry until golden brown. Remove to platter and keep warm.
4. Pour off most of the oil leaving about 2 tbsp.
5. Sauté onion, chilies, shredded ginger and lemon rind for two minutes, or until onion is transparent.
6. Pour in asam juice, soy sauce, sugar and water. Heat thoroughly stirring all the time. Add chopped shallots.
7. Spoon sauce over deep fried fish. Serve with steamed rice.
