Indonesian Noodles

Ingredients:

* 250g lean pork, sliced finely
* 1 cup stock
* 4 tbsps vegetable oil
* 1 cup cabbage, sliced
* 1 cup bean sprouts, washed and hulled
* 1 tsp salt
* 1 tsp sugar
* 1 tbsp oyster sauce, optional
* 1 tsp sesame oil
* 1 tbsp soy sauce
* 1 egg, made in to omelet, shredded
* Shallots, finely chopped
* 250g fresh egg noodles (or very fine vermicelli)

Making Indonesian Noodles
1. Simmer the sliced pork in stock for 10 minutes. Remove pork and retain stock.
2. Heat wok, add 2 tbsp vegetable oil and fry the cabbage for one minute, add the bean sprouts, salt, sugar and mix together for another minute.
3. Add the pork and oyster sauce. Remove to platter.
4. Cook noodles in boiling water until just done, place in a colander and run cold water through noodles.
5. Wipe wok clean, put in one tbsp vegetable oil and when hot, pour in noodles and sesame oil. Stir in wok for 2 to 3 minutes and return the vegetables and pork to heat through.
6. Pour in the stock, correct seasoning and mix together for another minute.
7. Serve with side dishes of hot sambal with shreds of omelet and shallots.
