Cucumber Chutney

Cucumber Chutney
Ingredients:
* ½ kg cucumber
* ½ tsp salt
* A small lump of tamarind
* ½ tsp oil
* A pinch of turmeric powder
For seasoning:
* ½ tsp Urad dal (black gram - split)
* A pinch of Asafoetida
* ½ tsp mustard seeds
* 3 red chilies
* ¼ tsp fenugreek seeds
* 3 green chilies
Making Cucumber Chutney
1. Peel and finely chop the cucumber. Mix the chopped cucumber, turmeric powder and salt in a bowl. Set aside for 15 minutes, and then squeeze out the excess water.
2. Heat oil and fry seasoning ingredients. Grind the fried ingredients along with the tamarind at high speed for 3 minutes or until a fine paste is obtained.
3. Mix the paste and the chopped cucumber till well combined.
4. Serve the chutney garnished with chopped coriander leaves.
