Coconut Fish
Ingredients:
* 1kg fish fillets
* 1/3 cup malt vinegar
* 5 tsp lemon juice
* Salt to taste
For the green coconut chutney:
* 3 1/3 tbsp coriander seeds
* 1 tbsp cumin seeds
* ½ cup coconut (fresh), grated
* 1 tbsp garlic paste
* 6 green chilies, chopped
* 1 tbsp green coriander, chopped
* 1 tsp red chili powder
* 5 tsp sugar
* 2 tbsp oil
Making Coconut Fish
1. Marinate the fish fillets in vinegar, lemon juice and salt for 30 minutes.
2. Combine all the ingredients for the green chutney with a little water in a blender to make a fine paste.
3. Apply this paste evenly on the fish fillets.
4. Wrap each fillet separately in a greased piece of aluminum foil.
5. Place each wrapped fish in a steamer and steam for 10-15 minutes.
6. Unwrap the fish, arrange on a platter and serve with lemon wedges.
