Integral part of a healthy rich diet is vegetables. These are rich in minerals, vitamins and are free from cholesterol. Vegetables are good source of photochemicals and antioxidants which help in prevention of various chronic diseases such as cancer, diabetes & heart diseases.
Mostly vegetables are eaten in cooked form which can destroy the essential nutrients. Cooking green vegetables can damage vital enzymes which are necessary for the body. Therefore eating vegetables in raw form is more beneficial as they are highly rich in vitamins, important enzymes, natural sugars and other nutrients which are necessary for proper body functioning. You should thoroughly wash the raw vegetables before you eat them to remove dirt or pesticide residue.

Raw food is considered extremely beneficial but can cause some health problems in people of certain age groups. So such a diet should be avoided by pregnant women, children and people suffering from anemia.
